One of my favorite Mexican dishes is Chile Rellenos. It is a roasted poblano pepper stuffed with queso Chihuahua or queso Oaxaca and then covered in egg batter or flour and fried. Chile Rellenos normally has a nice amount of heat but without being too hot. The ones pictured were excellent and hard to stop eating.
