Perhaps my last foodandtell from Mexico this Christmas, a Nopal salad. Nopal is a cactus that is native to Mexico and has lots of health benefits and can be a bit slimy like okra.

One of my favorite Mexican dishes is Chile Rellenos. It is a roasted poblano pepper stuffed with queso Chihuahua or queso Oaxaca and then covered in egg batter or flour and fried. Grilled plantains are soft, chewy and less sweet than bananas. They are a wonderful side dish for many meals.
Pictured is a delicious platter of arrachera, which is marinated skirt steak, served with roast vegetables and hot peppers. Delicious!
I was lucky enough to spend the holidays being served outrageous quantities of Mexican food by Mexican cooks. And although I didn’t get much by way of recipes, I do have a bunch of photos to share. Watch this space!
