One of my favorite Mexican dishes is Chile Rellenos. It is a roasted poblano pepper stuffed with queso Chihuahua or queso Oaxaca and then covered in egg batter or flour and fried. Grilled plantains are soft, chewy and less sweet than bananas. They are a wonderful side dish for many meals.
Pictured is a delicious platter of arrachera, which is marinated skirt steak, served with roast vegetables and hot peppers. Delicious!
